This past Saturday 4/21/2012 was the Savor by Sam Midnight Brunch/Cocktail Affair.  My friends and closest supporters came out on a rainy night in Harlem for a French Brasserie inspired Brunch hors d’ oeuvres and a signature cocktails.  Great event! Great friends!

Guinness Beef Stew

  • 2 pounds boneless chuck roast, cut into 1-inch cubes
  • 1 large onion chopped
  • 2 garlic cloves finely chopped
  • 1 tablespoon tomato paste
  • 2 cups baby carrots
  • 2 cups diced Russet potatoes
  • 2 cups Guinness Stout
  • 4 cups beef broth 
  • 1 tablespoon black pepper
  • 1 teaspoon salt
  • 2 tablespoons finely chopped flat leaf parsley 
  • 1 tablespoon brown sugar
  1. Heat 2 tablespoons oil in a Dutch oven pot over medium high heat. Dry beef cubes with paper towel and season with the teaspoon of salt and half of the black pepper. Sear in the beef until brown on all sides.  This will take about 5 minutes, then remove cubes with slotted spoon.
  2. Add the onion and garlic to the pot, cooking for about 5 minutes or until tender. Add the tablespoon of brown sugar. Stir in beer and broth scraping all the sides and bottom of the pot loosening all the brown bits.  
  3. Add back in meat. Stir in remaining salt and pepper, bring to a boil.  Add the carrot and potato. Reduce heat and simmer for about an hour stirring occasionally.  When meat is falling apart and vegetables are tender, uncover and let come to a boil.  Taste to see if alcohol has cooked out.  Stew should have a deep flavor and color.  
  4. Sprinkle with parsley and serve.

Valentine’s Day Special

Savor by Sam did an event for Chinese New Year on January 23, 2012 and we served:

-Wonton tosada topped with fried oyster, kimchi and ginger scallion sauce

-Spicy rice cakes with hot sausage and bokchoy

-Chinese cookie cup filled with green tea yogurt, lemon posset and whipped cream
